Day Thirty Three: An Abundance

Oops, missed one!




I think I may end up making banana bread on the weekend. Anyone got a good receipe?

  2. Loving getting to know you Emily! Here's my Banana bread. It's a winner!

    Banana and Raspberry bread
    This is REALLY nice toasted in a toasted sandwich maker, have to get the outside crisp and then slather it with butter! I also halve the oil and put in one whole egg as well as an egg white, try it as per the recipe but feel free to change it about. Makes nice muffins too and you can freeze them.

    2 egg whites
    2 medium ripe bananas mashed
    ¾ cup soft brown sugar
    ¼ cup vegetable oil (I use olive and think it is too heavy which is why I do what I do with the egg)
    1 ½ cups plain flour
    1 tsp cinnamon
    1 ¼ tsp baking powder
    ½ tsp bicarb of soda
    1 ¾ cups frozen raspberries
    2x little tubs of fruit like peaches or 2 fruits – they say WW but I use Goldburn Valley – drained

    Preheat oven 160 oC
    Grease loaf tin (22cm x 12cm) & line w paper hanging it over the long sides
    Combine egg white, banana, sugar & oil (egg) in a large bowl. Sift flour, cinnamon, baking powder & bicarb in to wet mix. Mix to combine then add raspberries & other fruit.
    Spoon mix into loaf tin & bake for 1hour 15mins or until skewer comes out clean. Stand loaf in tin for 5 mins then cool on wire rack. This doesn’t cut well when it is really warm.
